Chewy peanut butter and chocolate chip cookies

My boyfriend lives interstate and when he comes to visit I always send him home with baked goods. I love baking but never do it just for myself, so when he is here it's a perfect opportunity (he thinks I am just doing it to be nice...truth is I just really love baking)!

These chewy peanut butter and chocolate chip cookies are by far his favourite and so easy to make. I have also made them with gluten free flour and they are just as delicious. If you want to make it easier to spoon the mixture into balls, you can refrigerate the mixture for an hour or so after step 3 but you will need to bake them for a few minutes longer.  My other tip is that if you are using a two baking trays at one time, swap shelves in the oven halfway through. 

Oh, and don't forget to lick the bowl, by far the best reason to make this recipe!

Peanut butter and chocolate chip cookies (recipe adapted from

55 grams butter, softened
1/4 cup natural peanut butter
1/2 cup packed brown sugar
1/4 cup white sugar
1 egg
1 tbsp rice malt syrup (alternatively you could use honey)
1 tbsp water
1 tsp vanilla extract
1 1/4 cups plain flour
1/2 tsp baking soda
1/4 tsp salt
1 cup chocolate chips

1. Preheat oven to 190 degrees C.
2. In a large bowl, cream together the butter, peanut butter, brown sugar, and white sugar until smooth. Beat in the eggs one at a time, then stir in the rice malt syrup, water, and vanilla.
3. Combine the flour, baking soda, and salt; stir into the peanut butter mixture. Fold in chocolate chips.
4. Drop heaped tablespoons 2 inches apart onto lined baking trays.
5. Bake for 10 minutes in the preheated oven, or until edges are golden. Allow cookies to cool for a couple of minutes on the baking tray before moving to wire racks to cool completely.

Makes about 18 cookies
